Steam-Wrapped Sweet Potato with Cumin and Sea Salt
2 wet paper napkins
1 whole sweet potato
1 tablespoon virgin olive oil
1/8 teaspoon ground cumin
1/8 teaspoon coarse sea salt
Preparation: Wash the sweet potato. Use a fork and poke through the potato’s skin 5-7 times along the length of the potato. Wrap potato in wet napkins and place in microwave on high for 5 to 7 minutes. Squeeze potato to ensure it is fully cooked (soft when done). Cut in half lengthwise and squeeze each half from ends to fluff. Divide olive oil over both halves and sprinkle with ground cumin and sea salt. Serve with a fresh side salad, steamed or roasted veggies.
