TEMPTING: Spring Garlic, Honey and Rice Vinegar Stir fry Shrimp with Rice

 

Try this easy stir fry flavor explosion dish the next time you serve shrimp for dinner. It’s simply delicious – sweet, tangy and fresh aromatic garlic. Best of all this dish takes only minutes to prepare. 

Serve hot over steamed rice or chill and toss into a fresh garden salad. Pick the spring garlic fresh from the garden, if you have the opportunity,.

Ingredients:

1 pound shelled and deveined fresh shrimp

4 cups steamed rice

1 package frozen stir-fry vegetables (optional)

1/2 cup finely chopped Spring Garlic Greens

1/2 cup Honey

1/2 cup Rice Vinegar

1/4 cup olive oil

1/2 teaspoon corn starch

Peel, clean and rinse fresh shrimp then set aside.

Next dice 1/2 cup of garlic. We love spring garlic’s subtle but tangy fresh taste.

Place diced garlic into a small bowl and add equal parts rice vinegar and honey. Stir  combination together until the honey is dissolved and it is well mixed.

Stir fry vegetables in  1/2 the oil. Cook until nearly completed and transfer into a bowl.

Stir fry fresh shrimp with remaining olive oil for 4 minutes then stir in honey – vinegar-garlic mixture. Sprinkle corn starch onto shrimp and mix. Stir fry until shrimp is pink and fully cooked and sauce has thickened. Remove from heat. Serve with rice and vegetables.

The sauce has a perfect balance between sweet, sour and garlic. This recipe is an easy, quick and delicious meal that is also perfect when entertaining large groups.
