This is a “simply delicious” peach pie filling recipe.
Simple Peach Pie filling
8 fresh peaches
1/2 cup sugar
1/4 cup flour
1/4 teaspoon cinnamon
2 tablespoons lemon juice
Prep: Wash peaches. Pit and slice peaches. Place slices in bowl and toss with lemon juice. Add sugar, flour and cinnamon, mix together and let stand for 30 minutes. In a pot, cook mixture over medium heat until it begins to thicken. Remove from heat and let cool up to two hours. Ladle the pie filling into two – one quart size ziplock freezer bags. Freeze up to 1 year. Use one bag of pie filling per pie. Simply thaw and squeeze into a pie crust. Bake pie at 375 F for 55 to 105 minutes until crust is light brown. This recipe makes enough filling for 2 pies.
