Baby Step 34: Dehydrate Your Harvest

Dehydration is a quick and easy, healthy, long-term storage alternative for processing part of your fruit and vegetable harvest.

Removing all the moisture increases a stable shelf life of a year or more and dramatically decreases the space needed for storage.  Snack on healthy unprocessed fruit chips and reconstitute veggies with water for casseroles, soups and stews. Dry flowers and herbs for later use. There are many simple and inexpensive methods to dehydrating your harvest. Here are a few of our favorites.

Solar Screening: (Large quantities of Herbs):

Solar Dehydrator:

4 pounds carrots, 3 pounds potatoes, 4 pounds celery, 2 pounds mushrooms, chives, currents, grapes, strawberries, pears.

  1. I bought a dehydrator at the beginning of the summer…I live in Northern Canada, not enough sunshine and heat for a solar one, well not reliably anyway. I love it! 🙂
