Our summer squash is beginning to arrive along with lots of beautiful blossoms all perfect for sautéing. Try this simple, summer, side dish that’s delicious, quick to make and elegant to serve.
sautéed Summer Squash with Blossoms and Scallions
1/2 cup small summer squash (1-3 inches long) cut in half lengthwise
1/2 cup summer squash blossoms
1/2 teaspoon chopped scallions
2 tablespoons olive oil
sea salt to taste
ground pepper to taste
Prep: Heat olive oil over medium heat in a small saucepan. Begin sautéing sliced squash in hot oil for 3 minutes. Add chopped scallions and squash blossoms and continue sautéing for 2-3 minutes. Salt and pepper to taste. serves 2-3.
We lost every single zucchini plant to the bugs (again). So frustrating. Your dish looks yummy.
