The summer heat has begun and our strawberries are ripening quickly. When we have to pick them faster than we can eat them it’s time for our favorite frozen treat – Strawberry Mint Bombs.
This recipe is so simple I’m not sure it’s a recipe.
Simply de-stem and wash large fresh strawberries. Take clean fresh mint leaves and cut lengthwise in half with knife or scissors. Push half of mint leaf with tip of a small knife or skewer into top of each strawberry. Place stuffed strawberries on a tray and place in freezer until they are frozen solid. Place frozen strawberries in a ziplock bag or sealed container in freezer until needed.
Use Strawberry Mint Bombs as a tasty frozen snack or as a garnish in your favorite libation. Toss them in a blender with a drizzle of honey for a cool refreshing frostie or add other fruits with milk for a healthy and delicious smoothie.
