Tempting Tuesday: Fried Rice with Sweet Peas and Melted Goat Cheese

Taste the wonderful flavor combination of fried rice tossed with sweet sugar peas and creamy, tangy goat cheese.  Both taste and texture make this recipe simply delightful.

Fried Rice with Sweet Peas and Melted Goat Cheese

4 cups cooked white rice

1 teaspoon peanut oil

1 cup fresh sweet pea pods (de-stemmed)

4 ounces soft goat cheese

1/2 teaspoon soy sauce

Prep: Heat a wok or large fry pan to high heat and add peanut oil. When oil begins to smoke add the rice and let it set for one minute before stirring with a spatula. Stir fry the rice for three to four minutes then add soy sauce and peas. Stir and fry for 4-5 more minutes until pea pods turn bright and glassy. Remove from heat and crumble goat cheese  into fried rice and pea pods. Serve with soy sauce. This dish can be served hot or cold. Makes  3-4 servings.
