Radishes have been invading our garden beds. Picking a handful of radishes fresh from the garden always brings a smile to my face.
This radish salad is tempered with fresh mint then left in the fridge to marinate in a sea salt bath. The outcome is a wonderful juicy, salty, peppery, minty cup of radish slices. Serve them along side or inside sandwiches and burgers as a relish with grilled chicken breast or add them to a fresh garden salad. It’s a zesty radish salad that’s easy to make and is simply delicious.
Radish with Mint and Sea Salt Salad
1 cup fresh radishes (thinly sliced)
1/2 teaspoon fresh mint (fine chop)
1/2 teaspoon sea salt
1 cup water
Prep: Clean and wash radishes. With sharp knife thinly slice radishes and place them in a medium size plastic bowl with lid. Chop mint and add to radishes with sea salt and water. Stir with fork until sea salt is completely dissolved. Place bowl in fridge and marinate for 4 to 12 hours. If radishes are not eaten after 12 hours rinse them with fresh water and consume within 3 days.
