The last two weeks of warm weather and sunshine have already ripened some of our strawberries and the rhubarb patch is exploding with growth. Sweet, fresh strawberries with mouth puckering rhubarb – two great reasons to cry out with joy that summer is so near.
Try this healthy, yummy, sweet and tangy smoothie combining both fresh strawberries and rhubarb with the pleasant underlay of mint and sage fused together.
Strawberry-Rhubarb Smoothie with Fresh Mint and Sage
Ingredients:
1 cup fresh strawberries (sliced)
2 – pieces rhubarb (1 inch)
1 cup crushed ice or cubes
1 tablespoon honey
2 tablespoon cold water
2 fresh mint leaves (finely chopped)
1 fresh sage leaf (finely chopped)
Prep: Combine all ingredients and blend in blender for 30 – 60 seconds until smooth. Adjust tartness by adding 1 or 2 more rhubarb pieces and re-blend. Makes two smoothies.
