Tempting Tuesday – Slow Simmered Baby Carrots with Spring Onions

Sweet baby carrots slowly simmered together with delicate spring onions are well worth the wait for the first days of summer. This recipe is simple however it does require patience.

Slow Simmered Baby Carrots with Spring Onions

Ingredients:                                                                                                                                                                 

2 cups baby carrots (sliced)

1 fresh wintered onion (diced)

1 cup water

2 tablespoons butter or margarine

dash of sea salt

dash of coarse fresh ground pepper.

Prep: In a medium sauce pan bring water to a boil. Add carrots and onions and simmer on low heat . Stirring occasionally, simmer until all moisture is removed and carrots begin to sizzle (20-30 minutes). Add butter, stir and simmer for 2-3 minutes. Garnish with fresh chives and serve. These are also wonderful chilled and served in a pasta salad.
